- 1 cup sugar
- 1/2 cup pumpkin puree
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the flour, sugar, baking powder, spices, and salt.
- In another bowl, whisk together the pumpkin puree, melted butter, and eggs until smooth.
- Combine the wet ingredients with the dry ingredients and mix until just combined. Fold in the nuts if using.
- Divide the dough in half and shape each half into a log on the prepared baking sheet.
- Bake for 25-30 minutes or until golden brown. Remove from the oven and let cool for 10 minutes.
- Slice the logs diagonally into 1/2-inch thick pieces and place them back on the baking sheet.
- Bake for an additional 10-15 minutes until the biscotti are crisp. Let cool completely before serving.
Notes
- Store biscotti in an airtight container for up to two weeks.
- For a sweeter treat, dip the cooled biscotti in melted chocolate.
