Ingredients

  • 1 cup sugar
  • 1/2 cup pumpkin puree
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the flour, sugar, baking powder, spices, and salt.
  3. In another bowl, whisk together the pumpkin puree, melted butter, and eggs until smooth.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined. Fold in the nuts if using.
  5. Divide the dough in half and shape each half into a log on the prepared baking sheet.
  6. Bake for 25-30 minutes or until golden brown. Remove from the oven and let cool for 10 minutes.
  7. Slice the logs diagonally into 1/2-inch thick pieces and place them back on the baking sheet.
