Ingredients

- 1 cup grated zucchini
- 1/2 cup almond flour
- 1/2 cup cocoa powder
- 1/2 cup protein powder
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, mix the grated zucchini, almond flour, cocoa powder, protein powder, honey or maple syrup, applesauce, eggs, and vanilla extract until well combined.
- Add the baking soda and salt, and mix until just combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into squares and serving.
Notes
- Store leftovers in an airtight container in the refrigerator.
- These brownies can be frozen for up to 3 months.
- Feel free to add nuts or chocolate chips for extra flavor.
