A delicious and nutritious twist on traditional banana bread, packed with protein from cottage cheese and bursting with blueberries.
Ingredients

- 2 ripe bananas
- 1 cup cottage cheese
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh or frozen blueberries
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the bananas until smooth.
- Add the cottage cheese, honey (or maple syrup), eggs, and vanilla extract to the mashed bananas and mix well.
- In another bowl, combine the whole wheat flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the blueberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For added flavor, consider adding a teaspoon of cinnamon.
- This bread can be stored in an airtight container for up to 5 days.
- Freeze leftovers for up to 3 months.
