Ingredients

  • 1.5 lbs pork tenderloin
  • 2 tablespoons Dijon mustard
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 tablespoon garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork tenderloin with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat.
  4. Sear the pork on all sides until golden brown, about 3-4 minutes per side.
  5. Remove the pork from the skillet and set aside.
  6. In the same skillet, add garlic and sauté for 1 minute.
  7. Add Dijon mustard and heavy cream, stirring to combine.
  8. Return the pork to the skillet, spooning the sauce over it.
  9. Sprinkle with fresh thyme.
  10. Transfer the skillet to the oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  11. Let the pork rest for 5 minutes before slicing and serving with the sauce.

Notes

  • For a thicker sauce, let it simmer longer before adding the pork.
  • Serve with mashed potatoes or steamed vegetables for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
