- 1.5 lbs pork tenderloin
- 2 tablespoons Dijon mustard
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 tablespoon garlic, minced
Instructions
- Preheat the oven to 400°F (200°C).
- Season the pork tenderloin with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Sear the pork on all sides until golden brown, about 3-4 minutes per side.
- Remove the pork from the skillet and set aside.
- In the same skillet, add garlic and sauté for 1 minute.
- Add Dijon mustard and heavy cream, stirring to combine.
- Return the pork to the skillet, spooning the sauce over it.
- Sprinkle with fresh thyme.
- Transfer the skillet to the oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- Let the pork rest for 5 minutes before slicing and serving with the sauce.
Notes
- For a thicker sauce, let it simmer longer before adding the pork.
- Serve with mashed potatoes or steamed vegetables for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
