Ingredients

  • 4 salmon fillets
  • 1 cup pomegranate juice
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Pomegranate seeds for garnish

Instructions

  1. In a small saucepan, combine pomegranate juice, honey, soy sauce, olive oil, and minced garlic. Bring to a simmer over medium heat.
  2. Reduce the heat and let the sauce simmer until it thickens, about 10-15 minutes.
  3. Preheat the grill or oven to medium-high heat.
  4. Season the salmon fillets with salt and pepper.
  5. Brush the pomegranate glaze over the salmon fillets.
  6. Grill or bake the salmon for about 6-8 minutes on each side, or until cooked through.
  7. Remove from heat and drizzle with additional glaze if desired.
  8. Garnish with pomegranate seeds before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the glaze.
  • Serve with a side of steamed vegetables or rice for a complete meal.
  • Leftover glaze can be stored in the refrigerator for up to a week.
