- 1 cup crushed pineapple, drained
- 1/2 cup water
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large mixing bowl, combine the angel food cake mix, crushed pineapple, water, and vanilla extract.
- Mix until well combined and the batter is fluffy.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 15-20 minutes or until the tops are golden and a toothpick inserted comes out clean.
- Allow to cool completely before serving.
Notes
- For added flavor, top with whipped cream and fresh pineapple chunks.
- Store leftovers in an airtight container at room temperature for up to 2 days.
