- 2 medium zucchinis
- 1 cup cherry tomatoes
- 1 cup cooked chicken, shredded
- 1/2 cup pesto sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the zucchinis into noodles using a spiralizer.
- Toss the cherry tomatoes with olive oil, salt, and pepper, and spread them on a baking sheet.
- Roast the tomatoes in the oven for about 20 minutes until they are soft and slightly caramelized.
- In a large skillet, add the zucchini noodles and pesto sauce, cooking over medium heat for 3-5 minutes until the noodles are tender.
- Once the tomatoes are done, add them and the shredded chicken to the skillet, mixing everything together.
- Serve warm and enjoy your flavorful dish!

- For a vegan option, substitute chicken with chickpeas or tofu.
