Description

A delicious and healthy dish featuring zucchini noodles tossed in pesto, topped with roasted tomatoes and grilled chicken.


Ingredients

  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • 1 cup cooked chicken, shredded
  • 1/2 cup pesto sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the zucchinis into noodles using a spiralizer.
  3. Toss the cherry tomatoes with olive oil, salt, and pepper, and spread them on a baking sheet.
  4. Roast the tomatoes in the oven for about 20 minutes until they are soft and slightly caramelized.
  5. In a large skillet, add the zucchini noodles and pesto sauce, cooking over medium heat for 3-5 minutes until the noodles are tender.
  6. Once the tomatoes are done, add them and the shredded chicken to the skillet, mixing everything together.
  7. Serve warm and enjoy your flavorful dish!
