  • ½ cup granulated sugar
  • 1 large egg
  • ¾ cup milk (any kind)
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup diced fresh peaches
  • ⅓ cup brown sugar (for topping)
  • ⅓ cup all-purpose flour (for topping)
  • ½ tsp ground cinnamon
  • 2 ½ tbsp melted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, whisk together 1 ¾ cups all-purpose flour, 2 tsp baking powder, ½ tsp salt, and ½ cup granulated sugar until well combined.
  3. In another bowl, beat 1 large egg and combine it with ¾ cup milk, ⅓ cup vegetable oil, and 1 tsp vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry mixture without over-mixing.
  5. Carefully fold in 1 cup diced fresh peaches.
  6. For the crumb topping, mix ⅓ cup brown sugar, ⅓ cup all-purpose flour, and ½ tsp ground cinnamon. Stir in 2 ½ tbsp melted butter until crumbly.
  7. Fill each muffin cup with batter, sprinkle with crumb topping, and bake for 20–25 minutes until tops are golden brown.
  8. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients. You can customize these muffins by adding nuts or using honey instead of sugar.
