- ½ cup granulated sugar

- 1 cup diced fresh peaches
- ⅓ cup brown sugar (for topping)
- ⅓ cup all-purpose flour (for topping)
- ½ tsp ground cinnamon
- 2 ½ tbsp melted butter
Instructions
- Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, whisk together 1 ¾ cups all-purpose flour, 2 tsp baking powder, ½ tsp salt, and ½ cup granulated sugar until well combined.
- In another bowl, beat 1 large egg and combine it with ¾ cup milk, ⅓ cup vegetable oil, and 1 tsp vanilla extract until smooth.
- Gently fold the wet ingredients into the dry mixture without over-mixing.
- Carefully fold in 1 cup diced fresh peaches.
- For the crumb topping, mix ⅓ cup brown sugar, ⅓ cup all-purpose flour, and ½ tsp ground cinnamon. Stir in 2 ½ tbsp melted butter until crumbly.
- Fill each muffin cup with batter, sprinkle with crumb topping, and bake for 20–25 minutes until tops are golden brown.
- Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients. You can customize these muffins by adding nuts or using honey instead of sugar.
