- 2 cups vegetable broth or water

Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the quinoa: Rinse the quinoa under cold water, combine with broth/water, bring to a boil, then simmer for about 15 minutes.
- Prepare the vegetables: Chop them into bite-sized pieces and place on a baking sheet.
