Description

A quick and easy one pot meal featuring ground turkey and pasta, perfect for busy weeknights.


Ingredients

  • 1 lb ground turkey
  • 12 oz pasta (penne or rotini)
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach (optional)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. In a large pot, brown the ground turkey over medium heat until fully cooked.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, chicken broth, pasta, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 10-12 minutes, or until the pasta is al dente.
  5. If using, stir in the spinach and cook until wilted.
  6. Serve hot, topped with grated Parmesan cheese if desired.
