Description

A delicious and easy-to-make layered Mediterranean vegetable lasagna featuring creamy ricotta cheese and a variety of Greek vegetables, all cooked in one pan for convenience.


Ingredients

  • 2 cups zucchini, sliced
  • 2 cups eggplant, diced
  • 1 cup bell peppers, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach, fresh
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 9 lasagna noodles, uncooked
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté zucchini, eggplant, and bell peppers until softened.
  3. Add cherry tomatoes and spinach, cooking until spinach wilts.
  4. In a separate bowl, mix ricotta cheese with oregano, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles over the sauce, followed by half of the vegetable mixture, half of the ricotta mixture, and a sprinkle of mozzarella.
  7. Repeat the layers, finishing with a final layer of noodles, marinara sauce, and the remaining mozzarella and Parmesan cheese on top.
  8. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  9. Let it cool for a few minutes before slicing and serving.

Notes

  • Feel free to add other vegetables like mushrooms or carrots.
  • This dish can be made ahead of time and stored in the refrigerator.
  • For a vegan version, substitute ricotta and mozzarella with plant-based alternatives.
