Description
A delicious and easy-to-make layered Mediterranean vegetable lasagna featuring creamy ricotta cheese and a variety of Greek vegetables, all cooked in one pan for convenience.
Ingredients

- 2 cups zucchini, sliced
- 2 cups eggplant, diced
- 1 cup bell peppers, chopped
- 1 cup cherry tomatoes, halved
- 2 cups spinach, fresh
- 1 cup ricotta cheese
- 2 cups marinara sauce
- 9 lasagna noodles, uncooked
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and sauté zucchini, eggplant, and bell peppers until softened.
- Add cherry tomatoes and spinach, cooking until spinach wilts.
- In a separate bowl, mix ricotta cheese with oregano, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce, followed by half of the vegetable mixture, half of the ricotta mixture, and a sprinkle of mozzarella.
- Repeat the layers, finishing with a final layer of noodles, marinara sauce, and the remaining mozzarella and Parmesan cheese on top.
- Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden.
- Let it cool for a few minutes before slicing and serving.
Notes
- Feel free to add other vegetables like mushrooms or carrots.
- This dish can be made ahead of time and stored in the refrigerator.
- For a vegan version, substitute ricotta and mozzarella with plant-based alternatives.
