Delicious no-bake cookies made with Rice Krispies and a coffee crunch flavor.
Ingredients

- 3 cups Rice Krispies
- 1 cup chocolate chips
- 1/2 cup peanut butter
- 1/4 cup brewed coffee
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
Instructions
- In a saucepan, combine peanut butter, honey, brewed coffee, and vanilla extract over medium heat until melted and smooth.
- Remove from heat and stir in chocolate chips until melted.
- Add Rice Krispies to the mixture and stir until well coated.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes to set.
Notes
- Store in an airtight container in the refrigerator.
- Feel free to add nuts or dried fruits for extra texture.
- Adjust the coffee amount to your taste preference.
