- 1 cup balsamic vinegar
- 1/2 cup beef broth
- 1/4 cup brown sugar
- 4 cloves garlic, minced
- 1 onion, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (rosemary or thyme) for garnish
Instructions
- Season the beef roast with salt and pepper.
- In a skillet, heat olive oil over medium heat and sear the roast on all sides until browned.
- In a slow cooker, combine balsamic vinegar, beef broth, brown sugar, garlic, and onion.
- Add the seared roast to the slow cooker, ensuring it is well coated with the sauce.
- Cover and cook on low for 8 hours or until the beef is tender.
- Once cooked, remove the roast and let it rest before slicing.
- Serve with the sauce drizzled over the top and garnish with fresh herbs.
Notes
- For a thicker sauce, remove the roast and simmer the sauce on the stove until reduced.
- This dish pairs well with mashed potatoes or roasted vegetables.
