Instructions

- Combine the wet ingredients with the dry ingredients until just mixed.
- Fold in the diced apples.
- Heat oil in a deep fryer or heavy pot to 350°F (175°C).
- Using a spoon or a small ice cream scoop, drop batter into the hot oil, frying a few at a time.
- Fry until golden brown, about 2-3 minutes on each side.
- Remove from oil and drain on paper towels.
- Serve warm, optionally dusted with powdered sugar or drizzled with glaze.
