Ingredients

- 1 lb sirloin steak
- 3 tbsp olive oil
- 2 garlic cloves (minced)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
- 1 cup Greek yogurt (plain)
- Fresh herbs (parsley or dill)
Instructions
- Marinate the Steak: In a bowl, mix olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak and marinate for at least 30 minutes.
- Prepare the Tzatziki: In another bowl, combine Greek yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper. Mix well and chill.
- Cook the Steak: Heat a skillet over medium-high heat and cook the marinated steak for 4-5 minutes on each side until desired doneness. Let it rest before slicing.
- Assemble Your Bowls: Start with a layer of cooked grains, then add sliced steak, cherry tomatoes, cucumber, and drizzle with tzatziki.
Notes
You can marinate the steak up to 24 hours ahead. Leftovers can be stored in an airtight container for up to 3 days.
