  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • Salt & pepper (to taste)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced)

Instructions

  1. Prepare the Marinade: In a bowl, mix olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper. Coat the sirloin steak in the marinade, ensuring it’s well-covered. Let it marinate for 30 minutes to 4 hours.
  2. Whip Up the Tzatziki: In a separate bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, fresh dill, and a pinch of salt and pepper. Stir until smooth and creamy, then place it in the fridge to chill while you cook.
  3. Make the Vinaigrette: Whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, and salt and pepper in another bowl. This dressing will act as the flavorful drizzle atop your bowl.
  4. Sear the Steak: Heat a heavy-bottomed skillet over medium-high heat and add a splash of olive oil. Once hot, carefully place the marinated steak into the skillet. Sear for 4-5 minutes on each side or until you reach your desired doneness. For a juicy steak, aim for medium-rare. Let it rest for 5 minutes before slicing it thinly against the grain.
  5. Assemble Your Bowl: Start by layering your cooked grains as the base. Place the sliced steak on top, then artfully arrange the cherry tomatoes, diced cucumber, red onion, olives, and feta cheese. A generous dollop of tzatziki over the top brings it all together wonderfully. Drizzle your vinaigrette for an added zing.
