Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup artichoke hearts, drained and quartered
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken breasts to the marinade and let sit for at least 30 minutes.
  3. Preheat the grill or a skillet over medium heat.
  4. Cook the chicken for 6-7 minutes on each side or until fully cooked.
  5. In the last few minutes of cooking, add artichokes and olives to the pan to warm them through.
  6. Remove from heat and let rest for a few minutes before slicing.
  7. Garnish with fresh parsley and serve.
