  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • Fresh basil leaves
  • Sea salt for sprinkling

Instructions

  1. In a bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
  5. Preheat the oven to 425°F (220°C).
  6. Transfer the dough to a greased baking sheet and stretch it out to fit the pan.
  7. Top the dough with halved cherry tomatoes, diced mozzarella, and fresh basil leaves.
  8. Sprinkle with sea salt and drizzle with olive oil.
  9. Bake for 20-25 minutes or until golden brown.
  10. Let it cool slightly before slicing and serving.

  • For a more intense flavor, use heirloom tomatoes.
  • Let the focaccia cool completely before storing it in an airtight container.
