- 1 lb shrimp, peeled and deveined
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 cup onion, chopped
- 1 cup green bell pepper, chopped
- 1 cup celery, chopped
- 4 cloves garlic, minced
- 4 cups seafood stock
- 1 can diced tomatoes (14.5 oz)
- 2 tablespoons Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup green onions, chopped
- 1/4 cup parsley, chopped
- Cooked rice, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Whisk in the flour to create a roux, cooking until it turns a dark brown color.
- Add the chopped onion, bell pepper, and celery, cooking until softened.
- Stir in the garlic and cook for an additional minute.
- Add the seafood stock, diced tomatoes, Cajun seasoning, salt, and black pepper. Bring to a simmer.
- Add the shrimp and cook until they are pink and cooked through.
- Stir in the green onions and parsley just before serving.
- Serve over cooked rice.
Notes
- Adjust the spice level by adding more or less Cajun seasoning.
- For a thicker sauce, let it simmer longer.
- Can substitute shrimp with crawfish or chicken for variation.
