- 2 cups rolled oats
- 1 cup pecans, chopped
- 1/2 cup maple syrup
- 1/4 cup almond butter
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dried cranberries (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, combine the rolled oats, chopped pecans, and salt.
- In a small saucepan, heat the maple syrup and almond butter over low heat until melted and combined.
- Remove from heat and stir in the vanilla extract.
- Pour the wet mixture over the dry ingredients and mix until well combined.
- If using, fold in the dried cranberries.
- Press the mixture firmly into the prepared baking dish.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool completely before cutting into bars.
Notes
- Store in an airtight container for up to a week.
- Feel free to substitute pecans with other nuts or seeds.
- For a sweeter bar, add a bit more maple syrup.
