Maple Pecan Granola Bars are a delicious and nutritious snack option, perfect for a quick energy boost.


Ingredients

  • 2 cups rolled oats
  • 1 cup pecans, chopped
  • 1/2 cup maple syrup
  • 1/4 cup almond butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, combine the rolled oats, chopped pecans, and salt.
  3. In a small saucepan, heat the maple syrup and almond butter over low heat until melted and combined.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the wet mixture over the dry ingredients and mix until well combined.
  6. If using, fold in the dried cranberries.
  7. Press the mixture firmly into the prepared baking dish.
  8. Bake for 20-25 minutes or until golden brown.
  9. Allow to cool completely before cutting into bars.

Notes

  • Store in an airtight container for up to a week.
  • Feel free to substitute pecans with other nuts or seeds.
  • For a sweeter bar, add a bit more maple syrup.
