Ingredients

- 2 salmon fillets
- 1 cup cooked rice
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Preheat the grill to medium-high heat.
- Season the salmon fillets with olive oil, salt, and pepper.
- Grill the salmon for about 4-5 minutes on each side, or until cooked through.
- In a bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper to make the salsa.
- Once the salmon is cooked, flake it into large pieces.
- To assemble, place a serving of rice in a bowl, top with grilled salmon, and spoon the mango salsa over the top.
- Serve immediately and enjoy!
Notes
- For a spicier salsa, leave some seeds in the jalapeño.
- This dish can be served warm or cold.
- Feel free to substitute quinoa or cauliflower rice for a different base.
