Description

Mango Salsa Salmon Bowls are a refreshing and vibrant dish perfect for summer, combining grilled salmon with a zesty mango salsa over a bed of rice.


Ingredients

  • 2 salmon fillets
  • 1 cup cooked rice
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the salmon fillets with olive oil, salt, and pepper.
  3. Grill the salmon for about 4-5 minutes on each side, or until cooked through.
  4. In a bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper to make the salsa.
  5. Once the salmon is cooked, flake it into large pieces.
  6. To assemble, place a serving of rice in a bowl, top with grilled salmon, and spoon the mango salsa over the top.
  7. Serve immediately and enjoy!

Notes

  • For a spicier salsa, leave some seeds in the jalapeño.
  • This dish can be served warm or cold.
