Ingredients

  • 2 tablespoons almond flour
  • 1 tablespoon coconut flour
  • 1 tablespoon erythritol (or sweetener of choice)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1 large egg
  • 1 tablespoon unsweetened almond milk
  • 1 tablespoon melted butter
  • 1 tablespoon cream cheese (for frosting)
  • 1 teaspoon vanilla extract

Instructions

  1. In a microwave-safe mug, combine almond flour, coconut flour, erythritol, baking powder, and cinnamon.
  2. Add the egg, almond milk, melted butter, and vanilla extract to the dry ingredients and mix well.
  3. Microwave the mug cake for 60-90 seconds, or until it has risen and is set in the middle.
  4. While the cake is cooking, mix the cream cheese with a little erythritol for frosting.
  5. Once the mug cake is done, let it cool for a minute, then top with the cream cheese frosting.

Notes
