- 1 tablespoon coconut flour
- 1 tablespoon erythritol (or sweetener of choice)
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 1 large egg
- 1 tablespoon unsweetened almond milk
- 1 tablespoon melted butter
- 1 tablespoon cream cheese (for frosting)
- 1 teaspoon vanilla extract
Instructions
- In a microwave-safe mug, combine almond flour, coconut flour, erythritol, baking powder, and cinnamon.
- Add the egg, almond milk, melted butter, and vanilla extract to the dry ingredients and mix well.
- Microwave the mug cake for 60-90 seconds, or until it has risen and is set in the middle.
- While the cake is cooking, mix the cream cheese with a little erythritol for frosting.
- Once the mug cake is done, let it cool for a minute, then top with the cream cheese frosting.
Notes
- Adjust the cooking time based on your microwave’s wattage.
- For a sweeter cake, increase the amount of erythritol.
