- 4 large eggs
- 1/4 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/2 cup cooked and crumbled sausage or bacon (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, whisk the eggs with salt and pepper.
- Heat a non-stick skillet over medium heat and pour in the egg mixture.
- Cook until the edges start to set, then gently lift the edges to allow uncooked egg to flow underneath.
- Once the egg is fully cooked, remove it from the skillet and set aside.
- In the same skillet, sauté the bell peppers and onions until soft.
- Add the cooked sausage or bacon if using, and mix well.
- Place the sautéed mixture on one half of the egg wrap, sprinkle with cheese, and fold the other half over.
- Cook for an additional minute until the cheese melts.
- Garnish with fresh cilantro and serve warm.
