Description

A delicious and healthy breakfast option featuring low carb tacos wrapped in egg.


Ingredients

  • 4 large eggs
  • 1/4 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/2 cup cooked and crumbled sausage or bacon (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, whisk the eggs with salt and pepper.
  2. Heat a non-stick skillet over medium heat and pour in the egg mixture.
  3. Cook until the edges start to set, then gently lift the edges to allow uncooked egg to flow underneath.
  4. Once the egg is fully cooked, remove it from the skillet and set aside.
  5. In the same skillet, sauté the bell peppers and onions until soft.
  6. Add the cooked sausage or bacon if using, and mix well.
  7. Place the sautéed mixture on one half of the egg wrap, sprinkle with cheese, and fold the other half over.
  8. Cook for an additional minute until the cheese melts.
  9. Garnish with fresh cilantro and serve warm.
