Description

Delicious and customizable low carb breakfast roll ups made with eggs, cheese, and your choice of fillings.


Ingredients

  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 slices of bacon or 2 sausage links, cooked and chopped
  • Salt and pepper to taste
  • Optional fillings: spinach, bell peppers, or avocado

Instructions

  1. Whisk together the eggs in a medium mixing bowl with salt and pepper until fluffy.
  2. Cook the egg mixture in a non-stick skillet over medium heat until set and lightly golden, about 2-3 minutes.
  3. Remove the cooked egg flap and lay it flat on a plate.
  4. Add a generous layer of shredded cheese and your choice of fillings.
  5. Roll the egg sheet tightly starting from one end.
  6. Slice the roll-up in half to reveal the layers and serve warm.

Notes

Make-ahead by preparing the egg mixture and storing in airtight containers for quick breakfasts. Can also be made in an air fryer or baked for a family-sized portion.
