Description

Crispy potato skins filled with melted cheddar cheese, smoky bacon, and green onions, perfect for any occasion.


Ingredients

Scale
  • 4 large russet potatoes
  • 8 slices of bacon
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes under running water and prick each one several times with a fork.
  3. Rub the potatoes generously with olive oil and sprinkle with salt.
  4. Bake the potatoes for approximately 45 minutes or until tender.
  5. Let the potatoes cool slightly for easier handling.
  6. Cut each potato in half lengthwise and scoop out some flesh to create a shell.
  7. Brush each potato skin with olive oil again and return them to the oven for 10-15 minutes.
  8. Cook the bacon until crispy, then crumble it into pieces.
  9. Fill each skin with cheese and crumbled bacon and return to the oven for 5 minutes.
  10. Top with green onions and sour cream before serving.

Notes

For customization, try different cheeses or add jalapeños for a spicy kick.
