Ingredients

- 4 large russet potatoes
- 8 slices of bacon
- 1 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- 1/2 cup sour cream
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes under running water and prick each one several times with a fork.
- Rub the potatoes generously with olive oil and sprinkle with salt.
- Bake the potatoes for approximately 45 minutes or until tender.
- Let the potatoes cool slightly for easier handling.
- Cut each potato in half lengthwise and scoop out some flesh to create a shell.
- Brush each potato skin with olive oil again and return them to the oven for 10-15 minutes.
- Cook the bacon until crispy, then crumble it into pieces.
- Fill each skin with cheese and crumbled bacon and return to the oven for 5 minutes.
- Top with green onions and sour cream before serving.
Notes
For customization, try different cheeses or add jalapeños for a spicy kick.
