Description

A delicious and creamy Loaded Cauliflower Au Gratin that is a perfect low-carb alternative to traditional potato gratin.


Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Steam the cauliflower florets until tender, about 5-7 minutes.
  3. In a large bowl, combine the cream cheese, sour cream, garlic powder, onion powder, salt, and pepper.
  4. Add the steamed cauliflower to the bowl and mix until well coated.
  5. Stir in the cheddar cheese, half of the Parmesan cheese, and green onions.
  6. Transfer the mixture to a greased baking dish and top with the remaining Parmesan cheese.
  7. Bake for 25-30 minutes or until the top is golden and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add some diced jalapeños.
  • This dish can be made ahead of time and reheated before serving.
