Ingredients

- 1 cup lentils
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- Fresh parsley for garnish
Instructions
- Rinse the lentils under cold water.
- In a pot, combine lentils and water, bring to a boil.
- Reduce heat and simmer for 20-25 minutes until lentils are tender.
- In a bowl, whisk together tahini, lemon juice, minced garlic, olive oil, salt, pepper, and cumin.
- Once lentils are cooked, drain any excess water and mix with the tahini dressing.
- Serve in bowls and garnish with fresh parsley.
