A refreshing twist on classic tiramisu, featuring layers of creamy mascarpone and zesty lemon flavors.


Ingredients

  • ¾ cup water
  • 1 ¼ cup granulated sugar
  • 3 tablespoons lemon zest
  • 7 egg yolks + 1 whole egg
  • ½ cup lemon juice (for cream)
  • 3 tablespoons lemon zest (for cream)
  • ⅛ teaspoon salt
  • 5 tablespoons unsalted butter
  • 1 ⅓ cup heavy cream
  • 16 ounces mascarpone cheese
  • ¾ cup granulated sugar (for cream)
  • ½ cup lemon syrup (from above)
  • 1 teaspoon vanilla
  • 1 (7 oz) package savoiardi ladyfingers (about 24)

Instructions

  1. Prepare the Lemon Syrup: In a saucepan, combine ¾ cup lemon juice, ¾ cup water, and 1 ¼ cups sugar. Heat over medium, stirring until the sugar dissolves entirely. Remove from heat and let it cool.
  2. Make the Lemon Curd: In another saucepan, combine 3 tablespoons lemon zest, 7 egg yolks, and 1 whole egg with ½ cup sugar and ⅛ teaspoon salt. Whisk well until smooth. Gradually add the cooled lemon syrup while whisking continuously. Cook over low heat, stirring frequently until thickened.
  3. Incorporate the Butter: Once thick, remove from heat and add in 5 tablespoons cut-up unsalted butter, whisking until entirely melted and smooth. Let it cool completely.
  4. Prepare the Cream: Chill your mixing bowl and beaters, then pour 1 ⅓ cups heavy cream and beat until soft peaks form. In a separate bowl, blend 16 ounces mascarpone cheese and ¾ cup sugar until creamy. Gently fold the whipped cream into the mascarpone mixture.
  5. Layer the Tiramisu: Dip each ladyfinger quickly in the lemon syrup and lay them in the bottom of a 9×13-inch baking dish. Spread half of the mascarpone mixture over the layer of ladyfingers. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone cream.
  6. Chill: Cover the dish with plastic wrap and refrigerate for at least 240 minutes, preferably overnight.

Notes

Perfect for preparing a day ahead; the longer it sits, the better it tastes. Avoid overbeating the cream to maintain a light texture.
