  • 1 cup mixed greens
  • 1/2 cucumber (sliced)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup tahini
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)

Instructions

  1. Preheat the grill or a skillet over medium heat.
  2. In a bowl, mix lemon juice, lemon zest, olive oil, oregano, garlic powder, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Grill or cook the chicken for 6-7 minutes on each side until fully cooked.
  5. In a separate bowl, whisk together tahini, water, lemon juice, and minced garlic to make the sauce.
  6. Assemble the bowl by placing quinoa at the bottom, followed by mixed greens, sliced cucumber, and cherry tomatoes.
  7. Slice the grilled chicken and place it on top of the salad.
  8. Drizzle with tahini sauce before serving.
