  • 1/2 cup fresh lemon juice

  • 1/2 teaspoon baking powder
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish thoroughly.
  2. Cream together the softened butter and 1/2 cup of granulated sugar until fluffy (3-5 minutes).
  3. Mix in 2 cups of flour and 1/4 teaspoon of salt until it resembles a crumbly dough.
  4. Press the mixture evenly into the bottom of the prepared baking dish.
  5. Bake the crust for about 20 minutes until light golden.
  6. Whisk together the eggs, 1 cup granulated sugar, lemon zest, lemon juice, 1/4 cup flour, and baking powder until smooth.
  7. Pour the lemon mixture over the baked crust and spread it evenly.
  8. Bake again for 20-25 minutes, or until the filling is set and edges are slightly golden.
  9. Cool completely in the baking dish and dust with powdered sugar before slicing into squares.
