Delicious low-carb roll-ups featuring seasoned ground meat, sautéed vegetables, and melted cheese wrapped in crispy lettuce.

- 1 lb ground meat (beef or turkey)
- 8 oz Monterey Jack cheese, shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tsp garlic powder
- Salt and pepper to taste
- Lettuce leaves (for wrapping)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground meat in a skillet over medium heat until browned, draining excess fat.
- Add the sliced bell pepper and onion to the skillet and sauté until softened.
- Stir in garlic powder, salt, and pepper.
- Lay out the lettuce leaves on a flat surface and spoon the meat mixture onto each leaf.
- Sprinkle shredded Monterey Jack cheese on top.
- Roll up the lettuce leaves around the filling.
- Place the roll-ups in a baking dish and sprinkle remaining cheese on top.
- Bake for about 10-15 minutes or until the cheese is melted and bubbly.
- Serve warm and enjoy!
Notes
These roll-ups can be assembled ahead of time and stored in the fridge. Bake just before serving for fresh-out-of-the-oven goodness.
