Description

Delicious low-carb roll-ups featuring seasoned ground meat, sautéed vegetables, and melted cheese wrapped in crispy lettuce.


Ingredients

  • 1 lb ground meat (beef or turkey)
  • 8 oz Monterey Jack cheese, shredded
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Lettuce leaves (for wrapping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground meat in a skillet over medium heat until browned, draining excess fat.
  3. Add the sliced bell pepper and onion to the skillet and sauté until softened.
  4. Stir in garlic powder, salt, and pepper.
  5. Lay out the lettuce leaves on a flat surface and spoon the meat mixture onto each leaf.
  6. Sprinkle shredded Monterey Jack cheese on top.
  7. Roll up the lettuce leaves around the filling.
  8. Place the roll-ups in a baking dish and sprinkle remaining cheese on top.
  9. Bake for about 10-15 minutes or until the cheese is melted and bubbly.
  10. Serve warm and enjoy!

Notes

These roll-ups can be assembled ahead of time and stored in the fridge. Bake just before serving for fresh-out-of-the-oven goodness.
