- 12 slices corned beef
- 0.75 cup sauerkraut, drained and patted dry
- 2 tablespoons Dijon mustard
- 1 tablespoon chopped parsley (optional garnish)
Instructions
- Preheat your nonstick skillet over medium heat.
- Drain and pat dry the sauerkraut.
- Place slices of Swiss cheese into the skillet, cooking in batches of 2–3 for about 2 minutes until bubbly and slightly browned.
- Top each cheese slice with one slice of corned beef, one tablespoon of sauerkraut, and a drizzle of Dijon mustard.
- Using a spatula, roll the cheese slice into a tight log and repeat with the remaining ingredients.
- Garnish with chopped parsley and serve warm with extra mustard or Russian dressing for dipping.
