- 1 cup Sauerkraut, drained
- 8 slices Swiss Cheese
- 2 tbsp Mustard
- 4 Pickles, sliced
- 2 tbsp Cooking Oil (avocado or coconut)
Instructions
- Preheat your skillet over medium heat.
- Bake Swiss cheese on a lined baking sheet for 5-7 minutes until melted and slightly crispy.
- Layer corned beef and sauerkraut on each cheese slice.
- Add mustard and a pickle slice to the filling.
- Roll the cheese around the filling and secure with toothpicks if necessary.
- Fry the roll-ups in hot cooking oil for 2-3 minutes on each side until golden brown.
- Serve hot with extra mustard or dipping sauce.
Notes
Make ahead by preparing the roll-ups and storing them in the refrigerator until ready to fry. Consider using an air fryer for a healthier option.
