Description

Delicious low-carb roll-ups featuring corned beef, Swiss cheese, and tangy sauerkraut, all wrapped in a crispy cheese shell.


Ingredients

  • 8 oz Corned Beef, sliced
  • 1 cup Sauerkraut, drained
  • 8 slices Swiss Cheese
  • 2 tbsp Mustard
  • 4 Pickles, sliced
  • 2 tbsp Cooking Oil (avocado or coconut)

Instructions

  1. Preheat your skillet over medium heat.
  2. Bake Swiss cheese on a lined baking sheet for 5-7 minutes until melted and slightly crispy.
  3. Layer corned beef and sauerkraut on each cheese slice.
  4. Add mustard and a pickle slice to the filling.
  5. Roll the cheese around the filling and secure with toothpicks if necessary.
  6. Fry the roll-ups in hot cooking oil for 2-3 minutes on each side until golden brown.
  7. Serve hot with extra mustard or dipping sauce.

Notes
