  • 2 tbsp butter, melted
  • 8 oz cream cheese, softened
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • 2 tbsp erythritol (or your preferred keto sweetener)
  • ½ cup almond flour
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 large eggs, beaten
  • ¼ cup crushed pork rinds (optional, for extra crunch)

Instructions

  1. Lay the low-carb tortillas on a clean work surface. Brush each side lightly with melted butter.
  2. In a medium bowl, combine softened cream cheese, ground cinnamon, vanilla extract, and erythritol; whisk until smooth.
  3. Spread about 1 tablespoon of the mixture evenly over each tortilla, leaving a half-inch border.
  4. Roll the tortillas tightly from one edge and seal the end by pressing the buttered side against the roll.
  5. Dip each roll-up into the beaten eggs, coating all sides thoroughly.
  6. Combine almond flour, shredded mozzarella, grated Parmesan, and optional crushed pork rinds in a separate bowl.
  7. Roll each egg-coated cylinder in the mixture, pressing to adhere.
  8. Heat a non-stick skillet over medium-high heat, add butter, and cook the roll-ups seam-side down for 2-3 minutes on each side until golden.
  9. Transfer to a preheated 375°F oven and bake for 8-10 minutes to cook the interiors.
  10. Remove from heat, let rest for 3 minutes, and slice into 1-inch pinwheels.
