- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 large eggs, beaten
- ¼ cup crushed pork rinds (optional, for extra crunch)
Instructions
- Lay the low-carb tortillas on a clean work surface. Brush each side lightly with melted butter.
- In a medium bowl, combine softened cream cheese, ground cinnamon, vanilla extract, and erythritol; whisk until smooth.
- Spread about 1 tablespoon of the mixture evenly over each tortilla, leaving a half-inch border.
- Roll the tortillas tightly from one edge and seal the end by pressing the buttered side against the roll.
- Dip each roll-up into the beaten eggs, coating all sides thoroughly.
- Combine almond flour, shredded mozzarella, grated Parmesan, and optional crushed pork rinds in a separate bowl.
- Roll each egg-coated cylinder in the mixture, pressing to adhere.
- Heat a non-stick skillet over medium-high heat, add butter, and cook the roll-ups seam-side down for 2-3 minutes on each side until golden.
- Transfer to a preheated 375°F oven and bake for 8-10 minutes to cook the interiors.
- Remove from heat, let rest for 3 minutes, and slice into 1-inch pinwheels.
