Ingredients

  • 1 lb Italian Sausage
  • 2 Cups Carrots, Diced
  • 2 Cups Kale, Chopped
  • 4 Cups Chicken Broth
  • 1 Can (14 oz) Diced Tomatoes
  • 1 Cup Heavy Cream
  • 1 Teaspoon Italian Seasoning
  • Salt and Pepper to Taste
  • Grated Parmesan Cheese for Serving

Instructions

  1. In a large pot over medium heat, brown the Italian sausage until golden.
  2. Add the diced carrots and cook for about 5 minutes.
  3. Stir in the chopped kale and sauté for another 2-3 minutes.
  4. Pour in the chicken broth, diced tomatoes, and Italian seasoning, then bring to a boil.
  5. Reduce heat and add the cheese tortellini, cooking until tender, about 3-4 minutes.
  6. Stir in the heavy cream and gently simmer for an additional 2 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with grated Parmesan cheese.
