- 1 Package Cheese Tortellini
- 1 lb Italian Sausage
- 2 Cups Carrots, Diced
- 2 Cups Kale, Chopped
- 4 Cups Chicken Broth
- 1 Can (14 oz) Diced Tomatoes
- 1 Cup Heavy Cream
- 1 Teaspoon Italian Seasoning
- Salt and Pepper to Taste
- Grated Parmesan Cheese for Serving
Instructions
- In a large pot over medium heat, brown the Italian sausage until golden.
- Add the diced carrots and cook for about 5 minutes.
- Stir in the chopped kale and sauté for another 2-3 minutes.
- Pour in the chicken broth, diced tomatoes, and Italian seasoning, then bring to a boil.
- Reduce heat and add the cheese tortellini, cooking until tender, about 3-4 minutes.
- Stir in the heavy cream and gently simmer for an additional 2 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
