- 2 medium zucchinis (sliced)
- 1 cup spinach (chopped)
- 1 red bell pepper (diced)
- 1 cup cherry tomatoes (halved)
- 1 cup cottage cheese (fresh, room temperature)
- 2 large eggs (beaten)
- 1 cup shredded mozzarella (divided)
- 1/2 cup grated Parmesan
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt & pepper to taste
- Fresh basil or parsley (for garnish, chopped)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the vegetables: Toss zucchini, bell pepper, and tomatoes with olive oil, oregano, garlic powder, salt, and pepper. Spread on a baking sheet and roast for about 15 minutes.
- Mix the cottage cheese, beaten eggs, and half of the mozzarella in a large mixing bowl until creamy.
- Assemble the bake: Grease a baking dish, layer with roasted veggies, pour cottage cheese mixture over, and top with remaining mozzarella and Parmesan.
- Bake for 30–35 minutes until bubbly and golden.
- Let it rest for 10 minutes before serving.
- Garnish with fresh basil or parsley before enjoying.
