Ingredients

  • 2 medium zucchinis (sliced)
  • 1 cup spinach (chopped)
  • 1 red bell pepper (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cottage cheese (fresh, room temperature)
  • 2 large eggs (beaten)
  • 1 cup shredded mozzarella (divided)
  • 1/2 cup grated Parmesan
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • Fresh basil or parsley (for garnish, chopped)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the vegetables: Toss zucchini, bell pepper, and tomatoes with olive oil, oregano, garlic powder, salt, and pepper. Spread on a baking sheet and roast for about 15 minutes.
  3. Mix the cottage cheese, beaten eggs, and half of the mozzarella in a large mixing bowl until creamy.
  4. Assemble the bake: Grease a baking dish, layer with roasted veggies, pour cottage cheese mixture over, and top with remaining mozzarella and Parmesan.
  5. Bake for 30–35 minutes until bubbly and golden.
  6. Let it rest for 10 minutes before serving.
  7. Garnish with fresh basil or parsley before enjoying.
