Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 2 large sweet potatoes
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/4 cup bourbon
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground pork, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and oregano. Mix well.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet and bake for 20-25 minutes until cooked through.
  5. While the meatballs are baking, peel and chop the sweet potatoes. Boil them in salted water until tender, about 15 minutes.
  6. Drain the sweet potatoes and mash them with milk and butter until smooth.
  7. In a small saucepan, heat the bourbon over medium heat until slightly reduced, about 2-3 minutes.
  8. Serve the meatballs over the sweet potato mash, drizzled with bourbon sauce and garnished with fresh parsley.

Notes

  • For a spicier kick, add red pepper flakes to the meatball mixture.
  • Feel free to substitute ground turkey or chicken for a leaner option.
