- 1 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 2 large sweet potatoes
- 1/4 cup milk
- 2 tbsp butter
- 1/4 cup bourbon
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground pork, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and oregano. Mix well.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place the meatballs on a baking sheet and bake for 20-25 minutes until cooked through.
- While the meatballs are baking, peel and chop the sweet potatoes. Boil them in salted water until tender, about 15 minutes.
- Drain the sweet potatoes and mash them with milk and butter until smooth.
- In a small saucepan, heat the bourbon over medium heat until slightly reduced, about 2-3 minutes.
- Serve the meatballs over the sweet potato mash, drizzled with bourbon sauce and garnished with fresh parsley.
Notes
- For a spicier kick, add red pepper flakes to the meatball mixture.
- Feel free to substitute ground turkey or chicken for a leaner option.
- Leftover meatballs can be stored in the refrigerator for up to 3 days.
