- 1 pre-made pie crust
- 2 cups mixed seasonal vegetables (zucchini, bell peppers, carrots)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the pie crust and place it in a tart pan.
- In a bowl, mix the ricotta cheese, eggs, oregano, salt, and pepper.
- Add the mixed vegetables and mozzarella cheese to the ricotta mixture.
- Pour the mixture into the prepared pie crust.
- Sprinkle the grated Parmesan cheese on top.
- Bake for 30-35 minutes or until the tart is golden brown.
- Let it cool for a few minutes before slicing and serving.

- Feel free to use any seasonal vegetables you have on hand.
- This tart can be made a day in advance and reheated before serving.
