Ingredients

  • 1 pre-made pie crust
  • 2 cups mixed seasonal vegetables (zucchini, bell peppers, carrots)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a tart pan.
  3. In a bowl, mix the ricotta cheese, eggs, oregano, salt, and pepper.
  4. Add the mixed vegetables and mozzarella cheese to the ricotta mixture.
  5. Pour the mixture into the prepared pie crust.
  6. Sprinkle the grated Parmesan cheese on top.
  7. Bake for 30-35 minutes or until the tart is golden brown.
  8. Let it cool for a few minutes before slicing and serving.
