Ingredients

  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried herbs (thyme, rosemary, oregano)
  • Salt and pepper to taste
  • 2 cups mashed potatoes
  • 2 cups carrots, sliced and steamed

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together olive oil, minced garlic, dried herbs, salt, and pepper in a mixing bowl.
  3. Rub the mixture generously over the chicken breasts.
  4. Place the chicken on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes, until the internal temperature reaches 165°F (75°C).
  6. Boil peeled and cubed potatoes in salted water until fork-tender, then mash with butter, milk, salt, and pepper to taste.
  7. Steam the carrots until tender, about 5-7 minutes.
  8. Serve the chicken alongside the creamy mashed potatoes and bright steamed carrots.

Notes

For added flavor, marinate the chicken overnight in the garlic herb mixture.
