- 4 cloves garlic, minced
- 2 tablespoons olive oil

- 2 cups mashed potatoes
- 2 cups carrots, sliced and steamed
Instructions
- Preheat your oven to 400°F (200°C).
- Whisk together olive oil, minced garlic, dried herbs, salt, and pepper in a mixing bowl.
- Rub the mixture generously over the chicken breasts.
- Place the chicken on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, until the internal temperature reaches 165°F (75°C).
- Boil peeled and cubed potatoes in salted water until fork-tender, then mash with butter, milk, salt, and pepper to taste.
- Steam the carrots until tender, about 5-7 minutes.
- Serve the chicken alongside the creamy mashed potatoes and bright steamed carrots.
Notes
