Ingredients

  • 2 ripe bananas, mashed
  • 1 cup walnuts, chopped
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the mashed bananas and vanilla extract.
  5. In another bowl, combine the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the banana mixture, mixing until just combined.
  7. Fold in the chopped walnuts.
  8. Pour the batter into a greased cake pan and bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let the cake cool completely.
  10. In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
  11. Spread the whipped cream over the cooled cake and garnish with additional walnuts if desired.
