Ingredients

  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 1/4 cup oats
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine cottage cheese, Greek yogurt, honey, coconut oil, and vanilla extract until smooth.
  3. In a separate bowl, mix almond flour, oats, baking powder, and salt.
  4. Combine the wet and dry ingredients and mix well.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 25-30 minutes or until set and lightly golden on top.
  7. Let cool before slicing into bars.
