- 2 cups grated carrots

Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine whole wheat flour, baking soda, baking powder, salt, and cinnamon in a large bowl.
- Mix maple syrup, applesauce, and vanilla extract in another medium bowl.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined.
- Fold in the grated carrots and optional raisins or walnuts.
- Divide the batter among the muffin cups, filling them about three-quarters full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool slightly before serving warm.
