Ingredients

  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1/2 cup raisins or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine whole wheat flour, baking soda, baking powder, salt, and cinnamon in a large bowl.
  3. Mix maple syrup, applesauce, and vanilla extract in another medium bowl.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  5. Fold in the grated carrots and optional raisins or walnuts.
  6. Divide the batter among the muffin cups, filling them about three-quarters full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool slightly before serving warm.
