Ingredients

- 2 cups whole wheat flour
- 1 cup oats
- 1/2 cup honey or maple syrup
- 1 cup milk or dairy-free alternative
- 1/2 cup applesauce
- 2 eggs
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup mix-ins (chopped nuts, dried fruits, or chocolate chips)
Instructions
- Preheat your oven to 375°F (190°C) and line your muffin tin with paper liners.
- Mix your dry ingredients in a large bowl: combine whole wheat flour, oats, baking powder, salt, and cinnamon.
- Prepare your wet ingredients in another bowl: whisk together honey (or maple syrup), milk, applesauce, and eggs until smooth.
- Combine the wet mixture into the dry ingredients and gently fold until just combined.
- Add your mix-ins and fold gently to incorporate.
- Fill muffin cups about two-thirds full with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.

Make-ahead: Bake a double batch and freeze half. Reheat in the microwave or oven when ready to enjoy.
