Description

A refreshing and creamy salad combining tropical fruits and rich cream cheese, perfect for summer gatherings.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup whipped topping
  • 1/2 cup powdered sugar
  • 1 can (15 oz) crushed pineapple, drained
  • 1 cup shredded coconut
  • 1 cup fresh fruit (such as strawberries, kiwi, or mango), chopped
  • 1/4 cup chopped walnuts or macadamia nuts (optional)

Instructions

  1. Beat the softened cream cheese with a hand mixer until silky smooth.
  2. Gradually add the powdered sugar and mix until fully combined.
  3. Gently fold in the whipped topping using a spatula.
  4. Stir in the drained crushed pineapple and shredded coconut.
  5. Fold in the chopped fresh fruit.
  6. If desired, add the optional chopped nuts and fold gently.
  7. Cover with plastic wrap and chill in the refrigerator for at least one hour.
  8. Serve in bowls and garnish with additional fruit or coconut.

Notes

This salad can be made a day in advance for better flavor meld. Use fresh fruit at peak ripeness.
