A comforting casserole combining layers of zucchini, marinara sauce, seasoned meat, and melted cheese for a healthy twist on pizza.
Ingredients

- 3 medium zucchinis, sliced
- 1 lb ground beef or turkey
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Optional toppings: pepperoni, bell peppers, onions, or mushrooms
Instructions
- Preheat your oven: Set it to 375°F (190°C).
- Brown the meat: In a large skillet, cook the ground meat until browned, about 5-7 minutes. Drain any excess fat.
- Mix in the sauce: Add the marinara sauce, Italian seasoning, salt, and pepper to the meat. Stir and let simmer for about 5 minutes.
- Layer in the baking dish: Start with half of the zucchini, add half of the meat mixture and half of the mozzarella cheese. Repeat layers.
- Finish with Parmesan: Sprinkle the grated Parmesan cheese on top.
- Bake to perfection: Place in the oven for 30-35 minutes until zucchini is tender and cheese is bubbly.
- Allow to cool: Let the casserole cool for a few minutes before serving.
Notes
Make-ahead: Prepare in advance up to baking, store in fridge. You can also use an air fryer for quicker cooking.
