Ingredients

  • 1 avocado (sliced or mashed)
  • 1 cup frozen corn (thawed)
  • 1/2 cup red onion (diced)
  • 1/4 cup cilantro (chopped)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • Lime juice (to taste)
  • 1 tablespoon olive oil
  • Spices: paprika, garlic powder, salt, black pepper, cayenne pepper (optional)

Instructions

  1. In a mixing bowl, toss shrimp with olive oil, paprika, garlic powder, salt, black pepper, and optional cayenne until evenly coated.
  2. In another bowl, mix thawed corn, diced red onion, chopped cilantro, lime juice, and a pinch of salt. Stir gently to combine.
  3. Preheat grill to medium heat. Grill shrimp for 2–3 minutes per side until cooked through.
  4. In a separate bowl, whisk together mayonnaise, sour cream, chopped cilantro, lime juice, minced garlic, salt, and pepper until smooth.
  5. In serving bowls, layer corn salsa, grilled shrimp, and avocado. Drizzle with creamy garlic sauce before serving.
