- 4 large portobello mushrooms
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 whole wheat burger buns
- 1 cup fresh spinach
- 1 large tomato, sliced
- 1/2 red onion, sliced
- Avocado slices (optional)
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper.
- Remove the stems from the portobello mushrooms and brush the marinade over both sides of the mushrooms.
- Let the mushrooms marinate for at least 15 minutes.
- Place the marinated mushrooms on the grill and cook for about 5-7 minutes on each side, or until tender.
- Toast the whole wheat burger buns on the grill for 1-2 minutes.
- Assemble the burgers by placing a grilled portobello mushroom on each bun and topping with spinach, tomato, onion, and avocado if desired.
- Serve immediately and enjoy!
