- 4 ripe peaches, halved and pitted
- 1 baguette, sliced
- 1 cup goat cheese, softened
- 1/4 cup balsamic glaze
- 2 tablespoons olive oil
- Fresh basil leaves for garnish
Instructions
- Preheat the grill to medium heat.
- Brush the peach halves with olive oil and place them cut-side down on the grill.
- Grill the peaches for about 4-5 minutes until they are caramelized and have grill marks.
- While the peaches are grilling, brush the baguette slices with olive oil and grill them for 1-2 minutes on each side until toasted.
- Spread a generous amount of goat cheese on each toasted baguette slice.
- Top each slice with a grilled peach half.
- Drizzle with balsamic glaze and garnish with fresh basil leaves.
- Serve immediately and enjoy!
Notes
- For a sweeter touch, you can sprinkle a little brown sugar on the peaches before grilling.
- Feel free to substitute goat cheese with ricotta or cream cheese if desired.
