  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, oregano, garlic powder, salt, and pepper.
  3. Brush the chicken breasts with the olive oil mixture.
  4. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  7. Add the sliced chicken on top of the salad.
  8. Drizzle with balsamic vinaigrette and toss gently to combine.
