Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup broccoli florets
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, salt, and pepper.
  3. Place the sweet potatoes on the grill and cook for about 15-20 minutes, turning occasionally until tender.
  4. While the sweet potatoes are grilling, season the chicken breasts with the remaining olive oil, salt, and pepper.
  5. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  6. Steam the broccoli florets until tender, about 5 minutes.
  7. Once everything is cooked, assemble the bowl by placing sweet potatoes, grilled chicken, broccoli, and avocado slices together.
  8. Garnish with fresh cilantro and serve warm.

  • For added flavor, marinate the chicken in your favorite sauce for a few hours before grilling.
